野米
又名菰米或冰湖野米,源自北美洲,主要生產於北美及加拿大地區,本是印第安人的主食。黑野米其實是一種草的種子,比一般白米長兩倍,未煮熟時呈黑色,米成炊後就變成咖啡色,外層爆開兼露出白肉,比糙米有咬勁,有木頭與茶葉的芳香氣味。其營養成分亦是五穀中最豐富的,含有多種礦物質(鋅、硒、鐵、鈣、鎂、磷、鈉、鉀)、纖維質、維他命B1.B2等,其蛋白質含量也是五穀類之冠,其蘊含豐富的纖維是白米的3倍、葉酸是白米的5倍、蛋白質是白米的1倍。

Baker's Notes: Do not grease the cake pan. This cake needs traction to climb up the sides of the pan and reach it's full height. For the same reason, do not use a pan with a nonstick surface.


I usually just use the recipe that's on the back of the cream cheese box. It come out pretty good, and it's pretty simple.
